Chia seeds come from South America and were a mainstay in the diets of the Mayans and Aztecs. The word chia means "strength" and is supposed to bring energy and stamina to those who eat it. It packs a substantial amount of fiber (5 grams in one tablespoon) and can be used as an egg substitute (as a gel when mixed with water) or stirred in as a seed into both sweet and savory dishes. I am seeing them in recipes for all sorts of yummy desserts lately.
